I’m thrilled to share some exciting news with all our farmers market customers! We’ve recently added a new product to our lineup that I think you’re going to love: American Bresse chickens. These aren’t just any chickens—American Bresse is often referred to as the “veal of chicken” for its incredibly tender and flavorful meat. For those unfamiliar, the American Bresse chicken has an illustrious heritage, tracing its roots back to the Bresse region of France. In France, these chickens are revered and have even earned a protected designation, much like Champagne. Only chickens raised in the Bresse region under specific conditions can bear the name “Bresse.” But thanks to a few dedicated farmers this exceptional breed has been brought to the United States and adapted to thrive here.

One of the most significant differences between American Bresse and the typical chickens you find in grocery stores is how they’re raised. While most commercial chickens are processed at just six to eight weeks old, we allow our American Bresse chickens to grow for 16 weeks. This extended growing period is key to developing the deep, complex flavors and tender texture that these birds are known for.
